Ingredients Rundown

Ingredients To Make Garlic Butter Chicken Bites

Chicken breasts – skin-less + bone-less. You can use bone-in pieces too – cut them up in bite size pieces.

Seasonings – Garlic powder, onion powder and all-purpose seasoning.

Herbes de provence – you can also use mixed herbs or Italian seasoning.

Smoked paprika – regular paprika works too.

Red pepper flakes for a mild spicy kick- you can also use your favorite hot chile pepper or hot sauce or just leave it out completely,

Fresh cracked pepper – I recommend fresh cracked black pepper over anything sitting in a bottle. You’ll taste the difference.

Pink Himalyan salt – or your choice of salt. The salt will round out all the flavors and make them pop.

Spices –Caribbean green seasoning this adds a another layer of flavor,

Fresh garlic cloves – Use fresh garlic cloves, you can also use dehydrtated garlic in a pinch.

Other – Extra virgin oil – drizzled over the raw meat when seasoning. You can also you the same vegetable oil you use for searing.

Vegetable oil – Use a neutral flavor oil (flavorless) with a high smoke point.

Butter (salted or unsalted) I recommend using real butter whenever possible. Margarine is made of vegetable oil and butter is made from fresh cream. It’s highly processed and contains less nutritional value than butter. The flavor is unmatched.

You can also use Ghee as a low-lactose option. Margarine should be your absolute last resort (in my opinion). If you’re using salted butter – adjust the salt in the marinade to reduce your sodium intake.

You sure can. You can substitute Italian seasoning for herb de Provence in this recipe. You can also mix a few dry herbs together to create your own mix.

Properly stored, it will maintain the best quality for up to 2 months.

Leftovers can be kept for 3-4 days in the refrigerator. After that, the risk of food poisoning increases. If you don’t think you’ll be able to eat leftovers within four days, freeze them immediately.

How To Reheat Leftover Garlic Butter Chicken Bites On The Stove Top

1. Empty the chicken into a skillet over low heat and allow the food to heat all the way thru slowly. 
2. Turn pieces occasionally to ensure it heats all the way through. 
3. The does take some patience to re-heat this way, but of course, you can use the microwave. (see microwave instructions below)

How To Reheat Leftover Garlic Butter Chicken Bites In The Microwave?

The microwave is quick and convenient but it is not the best method for reheating your leftover chicken, it’s most likely to yield a rubbery or chalk-dry piece of chicken. yuck! If you must microwave the chicken, follow these steps for the best results.

1. Place a damp paper towel over the plate to add moisture and prevent the chicken bites from drying out too much. 
2. Reheat for about 4-5 minutes until your meal has heated all the way through. The actual time varies depending on your microwave.

• ▢ 4 pieces chicken breast (1-2 inch chunks, skinless, boneless)
• ▢ 2 teaspoons extra virgin oil
• ▢ 1 teaspoon garlic powder
• ▢ 1 teaspoon onion powder
• ▢ 2 teaspoons herbes de Provence
• ▢ 1 teaspoon smoked paprika
• ▢ all-purpose seasoning
• ▢ 1 teaspoon fresh cracked black pepper
• ▢ ¼ teaspoon pink Himalayan salt
• ▢ 2 teaspoons Caribbean green seasoning
• ▢ 2-3 vegetable oil (neutral oil + high smoke point)
• ▢ 2 tablespoons butter (salted or unsalted)
• ▢ 7 cloves garlic, minced

Instructions

 

1. Trim up chicken, cut into 1-2 inch bite-size pieces, and place in a medium-large bowl.
2. Pour vinegar into a bowl and add enough water to cover the chicken. Allow chicken to sit in the mixture for at least 30-60 seconds, then drain.
3. Rinse at least twice with fresh tap water to remove the vinegar smell from the meat.
4. Next, let the chicken sit in the bowl for at least one minute to allow the excess moisture to drain to the bottom of the bowl. Drain any liquid sitting at the bottom of the bowl, then pat the chicken dry with a clean paper towel. Discard paper towel when done.
5. To the bowl, add extra virgin olive oil, garlic powder, onion powder, herbes de Provence, smoked paprika, all-purpose seasoning, red pepper flakes, fresh cracked black pepper, pink Himalayan salt, and Caribbean green seasoning.
6. Massage the seasonings into the chicken set bowl aside and marinate for at least 15 minutes. Over-night is not necessary.
7. Heat vegetable oil in a heavy bottom skillet on medium-high heat.
8. Once the oil is hot, add chicken in a single layer in the skillet. Do not over-crowd the pot. Depending on the size of the pot you may have to do them in batches.
9. Sear chicken on both sides for 4-5 minutes until golden brown then remove and transfer them to a plate and set aside.
10. Reduce the heat to medium-low and allow the temperature on the pot to come down. You don’t want the pot to be too hot as the butter or garlic will burn quickly.
11. In the same pot, melt the butter. Once the butter is melted and frothy and the garlic.
12. Saute the garlic in the butter until fragrant or around 30-60 seconds. Stir frequently so it doesn’t burn to stick to the pot.
13. Add back the chicken to the pot and increase the heat to medium. Toss in the butter so it’s coated in the butter sauce for 3 minutes. Check to make sure the chunks have cooked through.
14. Garnish with parsley and enjoy!
