Instructions
To make the strawberry simple syrup:
- First, give your strawberries a good wash, and then gently pat them dry with a paper towel.
- Next, cut off the stems and slice up the strawberries into small pieces, and set them aside.
- In a small saucepan over medium-low heat, add the strawberries, sugar, and water, and stir together.
- Cook for 5 minutes or until the strawberries are softened.
- Transfer the mixture to a blender or food processor, and pulse until smooth. Alternatively, use an immersion blender.
- Pour the mixture through a fine-mesh strainer to remove any pulp.
To assemble the strawberry margarita:
- Add the margarita salt to a small plate.
- Rub the rim of your glass with a used lime wedge, then dip the rim of the glass in the salt.
- Fill a shaker (or mason jar or coffee cup) with 2 cups of ice, tequila, triple sec, fresh lime juice, and strawberry syrup.
- Cover and shake vigorously.
- Pour the mixture over the remaining ice to serve on the rocks.
- For a finishing touch, garnish with a fresh strawberry or a slice of lime.
